Cookie Cutter Breakfast Cakes

You know we love cookie cutter-ing just about everything (ahem, Lasagna Christmas Cookies much?) and breakfast time is no exception. Make your Christmas morning meal a little more creative and perfectly festive with cookie cutters, pancake mix, and fresh fruit.
Ingredients:
- pancake batter
- metal cookie cutters (plastic ones will melt!)
Optional (but not really optional!):
- maple syrup
- powdered sugar
- mixed berries
- whipped cream
First, mix up your pancake batter. We used a store-bought baking mix with 2 cups of milk, 1 egg, and 2 tablespoons of brown sugar.
Heat up your skillet or pancake griddle if you have one. Use your finger to line your cookie cutter with a thin layer of vegetable oil. Place your metal cookie cutter in the pan. Use a quarter cup measuring cup to pour the batter into the cookie cutter, about three quarters full. These cookie cutter cakes will definitely be thicker than regular old pancakes. Once the batter starts bubbling, flip your pancake with the cookie cutter still attached. Some of the batter may spill out while flipping, so make sure you press the cookie cutter gently into the pan so it keeps its form. Once cooked, remove, let cool for 2-3 minutes, and then gently press out of the cookie cutter.
Before you know it, you’ll have a stack of whimsical Christmas pancakes perfect for diving into while opening all your awesome presents.
Top with your favorite pancake accoutrements. We went with strawberries, blueberries and whipped cream. Powdered sugar would definitely make for good snow, and a little food coloring in the batter would be super fun for the kids table.
