Lasagna Christmas Cookies

That’s right. We combined two of the best things in the world: lasagna and cookies. How did we make such a seemingly questionable but likely delicious holiday treat? Thin lasagna (think half the layers) and cookie cutters! These savory little morsels are easy to make, delightful to eat, and are definitely perfect for the kids’ table at your holiday gatherings.
Ingredients:
- 1 box of lasagna
- 1 pint of ricotta
- 1 pint of cottage cheese
- 1 jar marinara sauce
- ½ cup pesto
- 2 heads of broccoli
Preheat oven to 350°F. Boil water. While waiting for the water to boil, whip together your ricotta, cottage cheese and pesto in a mixing bowl. Add salt and pepper to taste. Put your lasagna in the boiling water and let cook until al dente. While you wait for the pasta to cook, dice up that broccoli and toss in some olive oil and a pinch of chili pepper if you like to heat things up.
Using a cookie sheet, lay out one layer of lasagna. Add about half the creamy cheese mixture. Lay out your second layer of lasagna. Add marinara sauce and the rest of the ricotta. To make Christmas trees out of one third of the lasagna, we topped with broccoli crowns. And, because we had about a cup of extra shredded mozzarella, we threw that on the top third.
Bake for 35 minutes. Take out and let cool for 5 minutes. Then bring out the cookie cutters and start cutting! Be very careful and use a spatula under the cookie cutter as you take each lasagna cookie off the cookie sheet. Place onto a cutting board or another cookie sheet.
Once you have a good set of cookies, place back in the oven for 5-10 minutes. The result? Delicious and pretty hilarious Lasagna Christmas “Cookies” - Bon Appetit!
